If you are like me and are a huge fan of food trucks, then a story in today's Coloradoan written by Josie Sexton is for you. I went online today to see that there are two new food trucks to try in Fort Collins and I am now going to earmark these on my list of food options to hit up on in Northern Colorado.

According to the article, one of the first food trucks you should try is Austin Taco. 17 year restaurant manager John De Los Santos and his family have moved to Fort Collins and are serving up their delicious breakfast tacos to the masses. This is right up my alley! I'm a picky breakfast eater but love when I can get a homemade breakfast taco or breakfast burrito with fresh ingredients that make me want to crave more. With Austin Taco, their breakfast tacos start at a low price of only $3.50. That's it! Are you a fan of sausage and bacon in your taco? You can have it. How about chorizo and breakfast potatoes? They'll serve those up for you as well.

They also plan to have some interesting ingredients in their tacos, including a taco filled with chocolate covered strawberries. Mmmmmmm....

According to the article, you'll recognize the truck on the street with its graffiti-style signage painted over the big black van so keep an eye out!

Or I love the idea of house-ground brisket loaded on a pretzel roll with a side of freshly fried chips.

This is just a sample of what Culinary Chaos has to offer. If you stop by their food truck, you'll find six or seven dishes and it's all very affordable for a quick lunch. Plus they promise that they will offer one gluten free item per day which is great for all of us looking to eat healthy for lunch.
