Recipe Rescue: Back to Routines — Easy Ranch and Avocado Chicken Wrap
This time of year is one of the most frustrating as you get back to the routines of school and work and the whole juggling act of it all, try this recipe for easy an easy chicken wrap.
WHAT YOU'LL NEED TO MAKE EASY RANCH AND AVOCADO CHICKEN WRAP
4 large tortillas, I like to use flavored ones, like the spinach for this wrap. 1 Rotisserie chicken from the grocery store (or Sams-they're huge and affordable) 1 packet of ranch dressing mix, 1 cup of mayonnaise (cut calories and use plain Greek yogurt instead), 2 avocados, 2 celery stalks and bacon bits*
PUTTING IT ALL TOGETHER, THE RANCH AND AVOCADO CHICKEN WRAP
Shred the chicken meat and mix in a bowl with the mayonnaise, ranch mix, celery stalks (chopped) and the bacon bits (*they are optional so if not using them skip this part) Slice the avocado and line the center of each tortilla with even amounts of avocado, top with the chicken mixture and roll like a burrito. If you like you can add tomatoes, onions and/or lettuce. This wrap is good with some baked chips, a cup of soup, a small salad or cottage cheese.
Enjoy!
